This is the most mineral-driven and authentic Prosecco we have tasted. It is made using the "Col Fondo" method. This means that it’s a bottle fermented sparkling wine, from start to finish it has remained in the bottle. The wine is allowed to ferment naturally. Fermentation pauses during the winter. In the spring, fermentation restarts adding CO2 or the "Bubbles" to the wine. The result is a completely dry, sparkling wine that ages on it’s "lees". Rive Alte is a highly regarded site, it’s old vines coupled with the soil type create this super crisp and mineral-driven Prosecco.
