I recently had a pig roast and so, going along with the pig theme I decided to make some bacon cupcakes as desert. Late one night I searched the depths of the inter-web, hoping to find a perfect recipe but alas I found none and decided to ‘wing it’ with my own short cut version.
You will need:
1 pound of your favorite bacon
1/4 cup of simple syrup
1 box of vanilla cake mix ( and all it’s required ingredients)
1 jar of vanilla frosting
1/2 cup of maple syrup
For the candied bacon I removed 6 slices of bacon from the pack and let them sit in simple syrup for about 10 minutes before baking them in the confection oven on 300F for 20 minutes, retain all the fat that pools up and set aside. Please keep in mind that bake time will vary depending on the thickness of your bacon. What I looked for in the end was a nice crispy piece with a nice glossy sheen of ‘candy’. Wait for them to cool and slice them into 1/2 inch wise pieces and set them to the side.
Next I removed the second half of the bacon and roasted it in the oven as before however I did not soak it in simple syrup. You want these pieces to remain nice and salty since they are going to be the bits inside the cupcake. Once they crisp up, remove the bacon (don’t forget to save the fat in the pan) and chop the pieces into small pieces, think ‘bacon bits’ and set them aside.
This is where the cheat comes in, I used a box of Pillsbury vanilla cake mix. Prepared the recipe as directed EXCEPT that I used all the fat from the bacon in place of oil and added the chopped bits in at the end. Bake as directed and let cool.
Scoop the frosting into a mixing bowl and add maple syrup and mix well. Once the cupcakes have cooled pipe on the frosting (it took me many tries to find a design I liked) and garnish with candied bacon and piggie sprinkles (I got mine here). Happy baking!
