It’s summer and that always means one thing to me: tomato season. I love tomatoes. Every year, I have an abundance of tomatoes, but it’s never a burden like with say, zucchini. I always find a use for them. One of the simplest ways is to make a Caprese salad. It’s a classic Italian dish with a few basic ingredients:
2-3 Heirloom Tomatoes
6 Leaves of Basil
2 Balls of Mozzarella di Buffalo
Maldon Sea Salt or Sel Gris
Extra Virgin Olive Oil
Balsamic Vinegar (optional in our house)
Slice tomatoes, Mozzarella and Cheese.
Make it look pretty on a platter.
Drizzle Olive Oil Over Everything
Slice or Tear Basil and Scatter on top of cheese and tomatoes
Salt -Do this last. The salt crystals give a nice crunch and will lose their crunch as soon as they are in contact with moisture.
Don’t be fooled by this simple dish. When the ingredients are of good quality and the tomatoes are at the peak of their season, you’ll be going back for seconds and thirds.
